A welcome harbinger of late fall and a symbol of harvest bounty, the pumpkin is a seasonal favorite that is as much a part of American and Native American traditions as it is a delicious, versatile food staple with edible flesh, flowers, and seeds.

The pumpkin is a fruit, a member of the genus Cucurbits, which includes most squashes and gourds, and its name derives from “pepon” – the Greek word for “large melon.”  As a nutritional source, pumpkin contains potassium, Vitamin A and is 90% water by volume.

Native Americans are known to have made use of the entire pumpkin, with flesh for food, seeds for eating and medicinal purposes, and the rind flattened and dried to make mats.  Among its more popular incarnations in American cultural tradition are the pumpkin pie — from the tradition of early European settlers filling pumpkin shells with milk, spices, and honey and baking them in hot ashes. — and, of course, as the Jack O’ Lantern.  Yet, the original Jack O’Lantern of Irish lore was, in fact, a turnip.
